Macey said the vast bulk of their production is lettuce with a small amount of salad such as rocket, watercress and mesclun. They grow six or seven types of lettuces with differing leaves and colour that produce a very attractive as well as tasty salad. The lettuce plants are produced from seed through to maturity in about 90 days, then picked and packaged for delivery on a daily basis. It all starts with individual lettuce seeds being sown in slabs of fibre nutrient and when they are large enough the plants are placed in the growing channels without disturbing the root system. The growing channel has a constant flow of slow-moving water with a nutrient mixture dissolved in it. After flowing through the growing channels, the water returns to the holding tank where a computer analyses the nutrient content and correcting it where necessary. The purely natural nutrient that is added to the water is specifically mixed for Mean Greens by a supplier in Cambridge. While growing, the lettuces are not sprayed and no insecticides are used.
